Tofu Bhurji Recipe

Ingredients
  

  • 1 block 14 oz / 400g firm tofu, pressed
  • 1 medium onion finely chopped
  • 2 medium tomatoes chopped
  • 2 green chilies finely chopped
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • ½ tsp red chili powder optional
  • 1 tbsp oil any neutral oil
  • Salt to taste
  • ½ tsp kala namak black salt
  • 2 tbsp fresh cilantro chopped
  • Juice of ½ lemon

Instructions
 

  • Prep the Tofu
    Press the tofu to remove excess moisture. Crumble it into uneven chunks using your hands or a fork. Set aside.
  • Build the Flavor Base
    Heat 1 tbsp oil in a skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
    Add chopped onions and sauté until golden brown (about 5-6 minutes).
  • Add Aromatics
    Stir in ginger-garlic paste and green chilies. Cook for 1-2 minutes until the raw smell disappears.
  • Cook Tomatoes & Spices
    Add chopped tomatoes, turmeric powder, coriander powder, and red chili powder. Cook until tomatoes soften and oil separates from the masala, about 5 minutes.
  • Incorporate Tofu
    Add crumbled tofu to the pan. Mix gently to coat the tofu in the spices without breaking it too much. Cook for 5-7 minutes, stirring occasionally.
  • Finish and Serve
    Add kala namak, chopped cilantro, and lemon juice. Mix and taste for salt. Serve hot with toast, paratha, or rice.
