  • 1 cup fresh mint leaves, tightly packed

  • 1-inch piece of ginger, peeled

  • 6 whole cashew nuts (raw or lightly toasted)
  • ½ tsp salt to taste
  • 2 tbsp juice of 1 lemon
  • 2-4 tbsp water as needed

Instructions
 

  • Blend It All Together
    Add cilantro, mint, green chilies, ginger, peanuts, and cashews to a blender or food processor.
    Pulse a few times, then add 2 tablespoons of water and blend until smooth.
    Add more water, 1 tbsp at a time, if needed to reach your desired consistency.
