Ingredients
  

  • 2 cups (450–500 g) low-fat cottage cheese
  • cups fresh strawberries, hulled and divided
  • 2 to 3 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 sheets graham cracker, crushed, plus extra for topping

Instructions
 

  • Blend the Base
    Add the cottage cheese, 1 cup of the strawberries, honey (or maple syrup), vanilla extract, and salt to a high-speed blender or food processor.
    Blend on high until completely smooth and creamy, scraping down the sides as needed. This step ensures your ice cream has that luscious, scoopable texture.

  • Fold-In for Texture
    Dice the remaining ½ cup of strawberries.Gently fold the diced strawberries and half of the crushed graham crackers into the blended base. This gives the ice cream those classic cheesecake textures with fruit and cookie bits in every bite.

  • Freeze It
    Transfer the mixture to a chilled loaf pan or freezer-safe container.Press a piece of parchment or plastic wrap directly onto the surface of the mixture to help prevent ice crystals.Freeze for 3 to 4 hours, or until firm but scoopable.
  • Scoop and Serve
    Let the pan sit at room temperature for 5 to 10 minutes to soften slightly.Scoop into bowls or cones, and sprinkle with the remaining graham cracker crumbs before serving.
