Ingredients
  

  • Cups Soft Medjool dates (pitted)
  • 1 Cup Raw nuts (walnuts, almonds, or cashews)
  • ½ Cup Unsweetened shredded coconut (+ extra for rolling)
  • 1 Tsp Vanilla extract
  • ½ Tsp Cinnamon
  • ¼ Tsp Salt
  • 1 Tbsp Chia seeds (optional, for extra fiber)
  • 1 Tbsp Cocoa powder (optional, for a chocolate twist)

Instructions
 

  • Prep the Dates
    If your dates are slightly dry, soak them in warm water for 5-10 minutes, then drain. This helps them blend more easily.
  • Blend the Base
    In a food processor, combine the dates, nuts, vanilla, cinnamon, salt, and chia seeds (if using).
    Blend until a sticky dough forms. If the mixture is too dry, add a teaspoon of water. If it’s too wet, sprinkle in more shredded coconut.
  • Shape the Rolls
    Transfer the mixture to a bowl.
    Scoop out small portions and roll them into logs (or small balls, if you prefer).
    Roll each piece in shredded coconut to give it a nice outer coating.
  • Chill & Set
    Place the rolls on a parchment-lined plate and refrigerate for at least 20 minutes to firm up.
  • Serve & Enjoy
    That’s it! Enjoy them straight from the fridge or let them soften for a few minutes at room temperature.

Notes

  • No food processor? Mash everything by hand using a fork or finely chop the nuts and mix well.
  • Mix up the flavors – Add orange zest, cardamom, or a pinch of nutmeg for a different vibe.
  • Storage: These stay fresh in the fridge for up to 2 weeks or in the freezer for 3 months.
