- 2 cups aloe vera gel freshly extracted or store-bought
- 1 cup gram flour besan
- 1 cup sugar adjust to taste
- 1/2 cup ghee clarified butter
- 1/4 cup milk
- 1/4 tsp cardamom powder
- 2 tbsp chopped almonds
- 2 tbsp chopped cashews
- 2 tbsp desiccated coconut optional
- A pinch of saffron optional, for garnish
Prepare Aloe Vera Gel:If using fresh aloe vera, extract the gel by slicing the leaf open and scooping out the clear gel. Rinse thoroughly to remove bitterness.Blend the gel into a smooth consistency if needed.Roast Gram Flour:Heat 2 tablespoons of ghee in a non-stick pan on low heat. Add the gram flour and roast until it turns golden and aromatic. Stir continuously to avoid burning. Cook Aloe Vera Gel:In a separate pan, heat the remaining ghee and add the aloe vera gel.Cook on medium heat for 5-7 minutes, stirring to reduce its water content and intensify its flavor.Combine Ingredients:Mix the roasted gram flour into the cooked aloe vera gel, stirring continuously to avoid lumps. Add Sweetness and Flavor:Add sugar and milk to the mixture. Stir well until the sugar dissolves and the mixture thickens.Sprinkle cardamom powder and mix evenly.Incorporate Nuts:Add chopped almonds, cashews, and desiccated coconut. Cook for another 5 minutes until the mixture starts leaving the sides of the pan. Set and Garnish:Grease a plate or tray with ghee and pour the mixture into it. Spread evenly.Garnish with saffron strands and allow it to cool for 1-2 hours.Cut and Serve:Once set, cut the Kuvar Pak into desired shapes and serve.
