- ½ black beans
- ½ bell peppers
- ½ mushrooms
- ¼ red onion
- 1 zucchini
- 1 olive oil
- ½ cumin
- ½ chili powder
- ½ garlic powder
- Salt and pepper
- Cooking spray or butter (for the pan)
- Salsa, guacamole, or sour cream (for serving)
Prepare the veggies:Dice the bell peppers, red onion, and zucchini.Slice the mushrooms thinly.
