Ingredients
  

  • 4 flour tortillas
  • 1 shredded cheese
  • ½ black beans
  • ½ bell peppers
  • ½ mushrooms
  • ¼ red onion
  • 1 zucchini
  • 1 olive oil
  • ½ cumin
  • ½ chili powder
  • ½ garlic powder
  • Salt and pepper
  • Cooking spray or butter (for the pan)
  • Salsa, guacamole, or sour cream (for serving)

Instructions
 

  • Prepare the veggies:
    Dice the bell peppers, red onion, and zucchini.
    Slice the mushrooms thinly.

  • Sauté the vegetables:
    Heat a skillet over medium heat and add olive oil.
    Add the bell peppers, mushrooms, zucchini, and red onion.
    Season with cumin, chili powder, garlic powder, salt, and pepper.
    Sauté for about 3-4 minutes until the veggies are slightly softened.

  • Assemble the quesadillas:
    Place a tortilla on a clean surface.
    Sprinkle ¼ cup of shredded cheese on half of the tortilla.
    Add a layer of sautéed veggies and black beans on top.
    Sprinkle another ¼ cup of cheese over the veggies.
    Fold the tortilla in half, pressing gently.
  • Cook the quesadillas:
    Spray a skillet with cooking spray or melt a little butter over medium heat.
    Place the assembled quesadilla in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy.
    Repeat with the remaining tortillas.

  • Serve:
    Slice the quesadillas into wedges and serve with salsa, guacamole, or sour cream.
