Spicy Vegan Omelette is delicious way to have savoury breakfast. This is Indian style chickpea flour chilla recipe which made with chickpea flour. You can have it as breakfast or sometime as light dinner.

This is super versatile recipe in term of vegetables are used in the better. You can add more vegetables combinations like
Onion + tomato (I used)
Spinach + tomato + onion
Fenugreek leaves (methi) + tomato
Carrot + bell peppers + onion

My baby girl is fond of pancakes mostly spicy or salty one. She doesn’t like sweet pancake. She asks me to make dosa every time. She loves dosa or any pancakes but savoury one. But any dosa better or savoury pancake better required some preparations.
If you are making dosa, it requires over night soaking lentils and rice. I used to make instant dosa from semolina, but she likes authentic one.
Sometime at dinner table, she demands about chilla recipes. And I have to make it fast. At that time, this is the best option for me. Just adding tomatoes and garlic into chickpea flour and making better and make her wish comes true.
I always prefer it as breakfast recipe. As vegetarian, we must include legume or lentils into our daily menu, but sometime our lunch or dinner is just roti with curry (mostly vegetables), So my morning is start with full intake of protein with this vegan omelette. We all like spicy breakfast mostly with tea. So I have made spicy one. I did all variation listed above. And all tastes yum.

How to make spicy vegan omelette recipe:
In large bowl, add 2 cups of chickpea flour or besan. then add finely chopped onions, tomatoes, garlic paste, red chili powder, salt.
Then make better by adding water little by little.
Heat the non-stick tawa or flat pan. spread the mixture, let it cook for once side. apply ghee or oil little, and flip it with spatula.cook both side till golden brown.
Your besan chilla is ready to serve, I like thin. but you can make better with less water, and have little thick size of vegan omelette.
Avoid Mistakes at First Attempt of Making Spicy Vegan Omelette
- While making batter, add water little by little to get proper constituency.
- Use nonstick pan so that pancake will flip easily.
- You can add more vegetable like carrots, spinach or fenugreek leaves.
Spicy Vegan Omelette with chickpea flour | Indian style Besan Chilla Recipe
- 2 cups gram flour or chickpea flour
- Half cup chopped onion
- ½ cup chopped tomato
- 6 cloves garlic minced
- ½ tbsp red chili powder
- Salt to taste
- Water as required
- Take 2 cups of gram flour or besan into large mixing bowl; add tomato, onions, garlic, red chili powder, salt. mix them well
- Now add water little by little and mix it into flour. Add water to make spread constituency.
- Heat the large tawa or pan, and spread the mixture using spatula. Cook one side and flip to cook on the other side.
- Spread the oil for crispy one. Serve it with curd or green chutney or tomato ketch up.
