Tri colored Masala Dhokla | Layered Sandwich Dhokla

Tri colored Masala Dhokla OR Layered Sandwich Dhokla - Fermented & steamed savory rice and lentil cake.
  • 3 cups medium- grain rice
  • 1½ cups chana dal - chickpea lentils
  • 1 cup curd
  • 2 tbsp ginger paste or grated ginger
  • 1 tbsp salt
  • 1 tbsp fruit salt (Eno) or ½ tbsp citric acid or ½ tbsp baking soda
Green batter:
  • ½ cup chopped spinach
  • 1 green chili
Saffron Batter:
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  1. Take rice and lentils in separate bowl. And soak them for at least 8 hours.
  2. After 8 hours, drain the water grind the mixture in your food processor, using as little water as possible to lubricate the mixture as you grind it.
  3. Then add sour curd and some hot water and again put mixture in some hot place to get fermented. It may take 3-6 hours depends on weather.
  4. After 6 hours max, your batter is ready to make dhokla. First add salt and grated ginger into mixture.
  5. Now divide the mixture into three equal parts.
  6. To make saffron color mixture, add turmeric and red chili powder into one part and your red like color mixture is ready
  7. To make green color mixture, first of all grind the spinach and 1 green chili into food processor and make smooth paste of it. Then add that puree into one part of mixture and your green color paste is ready to use.
  8. Take one bowl or plate and grease it with some oil. I have used small bowls. First add 2 tbsp green batter and put it into streamer and let it stream for 2-3 minutes.
  9. Now take out bowls, add 2 tbsp white batter layer, and steam it again for 2-3 minutes. Finally, add 2 tbsp of third saffron color layer and steam it for 5 minutes. Your tri-color dhokla is ready to serve.
  10. To add tadka at top, heat the 2 tbsp oil into skillet, and add some mustard seeds and sesame seeds, pop it for while.
You can serve it with only groundnut oil.
