Mexican Fried Rice Recipe

Veg Mexican Fried Rice - Cooked rice tossed with kidney beans, corns, peppers and seasoned with some ordinary spices like salt and cayenne pepper powder.
  • 2 cup cooked rice
  • 1 cup kidney beans or black beans, soaked and boiled
  • 1 cup corn, boiled
  • ½ cup finely chopped onion
  • ½ cup finely cup tomato
  • ½ cup green bell pepper
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • Salt to taste
  • 2 tbsp tomato ketchup or tomato puree
  • 1 tbsp cayenne pepper powder or red chilli powder (adjust according to your taste)
  • ½ tsp vinegar
  1. Heat the skillet on high flame and add butter. Add garlic and onion and cook for 1-2 minutes.
  2. Then add green pepper and tomatoes and let it cook for another 3 minutes.
  3. Then add corn and beans and give a nice stir. Add seasoning at this stage. Add salt, red chili powder, tomato ketchup and vinegar. Cook for another 3 minutes.
  4. Finally add rice and mix it well. Let it cook for just 2 minutes.
  5. Mexican fried rice is ready to serve.
1) Serve with some fresh cool drinks or some sprinzlers

2) This fried rice can be used as enchilada stuffing of even for stuffed bell peppers.
