Broccoli Peanuts Pesto Recipe

Broccoli Peanuts Pesto is a pretty new trial from my side. Very healthy recipe. It is very good source of folic acid, potassium, vitamins and powerful antioxidant.
  • 1 cup broccoli florets (around 150 gm)
  • 1 tbsp peanuts
  • 2 cloves garlic
  • 1 green chili (i prefer the spicy one)
  • 10-12 mint leaves
  • ΒΌ cup olive oil
  • salt to taste
  • 1 tbsp cumin powder
  • 1 tbsp lemon juice
  1. In large sauce pan boil the water and then add broccoli and salt. Boil it for 8-10 minutes and drain all water. Immediately add broccoli into cold water for 1 minute and drain it. If it is still warm let it be cool at room temperature.
  2. Now take all the ingredients (broccoli, peanuts, garlic, mint leaves, salt, and cumin powder) except oil into food processor. Make a paste of all ingredients.
  3. Now take out the pesto into bowl or storage container and add lemon juice and oil, mix them well. Pesto is ready to use.
1) This is multi purpose pesto recipe. You can use it as dip with some chips or fritters.

2) You can add basil or cilantro into this recipe.

3) Add cheese if you like, but add cheese when you want to serve it. if you want to store it, at that time avoid cheese.
